A unique, layered cheesecake inspired by the Polyjuice Potion, featuring distinct green and brown layers.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • Green food coloring (gel preferred)
  • 1/2 cup chocolate chips
  • 1/4 cup heavy cream
  • 1 teaspoon instant coffee powder

Instructions

  1. Preheat your oven to 350°F (175°C). Wrap the bottom of a 9-inch springform pan in heavy-duty aluminum foil.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
  3. Beat the softened cream cheese and 1 cup sugar until smooth. Mix in vanilla extract, eggs one at a time, sour cream, and flour until just combined.
  4. Pour half of the batter over the cooled crust. Add several drops of green food coloring to the remaining batter and mix until you achieve a potion-like green color. Pour this green batter over the plain batter.
  5. Bake for 45 to 55 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  6. Remove the cheesecake from the oven and cool completely on a wire rack. Refrigerate for at least 4 hours, or preferably overnight.
  7. For the topping, melt the chocolate chips and heavy cream together in a small saucepan over low heat, stirring until smooth. Stir in the instant coffee powder until dissolved.
  8. Spread the chocolate coffee ganache over the chilled cheesecake. Return to the refrigerator until the ganache is set before serving.

Notes

  • Use gel food coloring for a more intense green color without thinning the batter.
  • Do not overmix the batter after adding the eggs to prevent cracking.
  • Allow the cheesecake to cool slowly to avoid sudden temperature changes that cause cracks.
