A straightforward recipe for a comforting white chicken chili using common pantry ingredients.

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can great northern beans, rinsed and drained
- 3 cups cooked, shredded chicken breast
- 1 (4 ounce) can diced green chilies, undrained
- Salt and black pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, cumin, oregano, and cayenne pepper, if using. Cook for 1 minute until fragrant.
- Pour in the chicken broth. Add both types of rinsed beans and the undrained diced green chilies.
- Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15 minutes, allowing flavors to combine.
- Stir in the shredded cooked chicken. Heat through for another 5 minutes.
- Season with salt and pepper to your taste before serving.
Notes
- For a thicker chili, mash about 1/2 cup of the beans against the side of the pot before adding the chicken.
- Serve with toppings like shredded cheese, sour cream, or fresh cilantro.
