  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 8 ounces sharp white cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Cook the macaroni according to package directions until al dente. Drain and set aside.
  2. In a medium saucepan over medium heat, melt the butter.
  3. Whisk in the flour and cook for one minute, stirring constantly.
  4. Gradually whisk in the milk until the mixture is smooth.
  5. Cook, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. Do not boil.
  6. Remove the saucepan from the heat. Stir in the shredded white cheddar cheese until completely melted and smooth.
  7. Stir in the salt, pepper, and nutmeg.
  8. Add the drained macaroni to the cheese sauce and stir to coat evenly.
  9. Serve immediately.
