A simple recipe for stir-fried noodles with mixed vegetables.

- 8 oz chow mein noodles
- 2 tablespoons vegetable oil
- 1 cup shredded cabbage
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1/2 cup sliced green onions
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
Instructions
- Cook chow mein noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add cabbage, carrots, and mushrooms to the skillet. Stir-fry for 3-4 minutes until vegetables start to soften.
- Add garlic and ginger. Stir-fry for 1 minute until fragrant.
- Add the cooked noodles to the skillet.
- In a small bowl, mix soy sauce, sesame oil, and sugar. Pour the sauce over the noodles and vegetables.
- Toss everything together until the noodles are evenly coated and heated through, about 2 minutes.
- Stir in green onions just before serving.
Notes
- For extra flavor, add a dash of white pepper with the soy sauce mixture.
- You can substitute other firm vegetables like broccoli florets or bell peppers.
