Description
Simple, fudgy cookies made with black beans as a base.
Ingredients

- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup rolled oats
- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chocolate chips (vegan)
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper.
- Place the rinsed black beans, rolled oats, sugar, cocoa powder, vanilla extract, baking powder, and salt into a food processor.
- Process the mixture until it is completely smooth. Stop and scrape down the sides as needed.
- Fold in the chocolate chips by hand.
- Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon.
- Bake for 12 to 15 minutes. The cookies will look soft when they come out.
- Let the cookies cool on the baking sheet for 10 minutes before moving them to a wire rack to cool completely.
Notes
- For a thicker cookie, chill the dough for 30 minutes before scooping.
- You can substitute maple syrup for the granulated sugar, reducing the amount to 1/3 cup.
