A recipe for homemade gnocchi using sweet potatoes as the main ingredient.

- 1 large sweet potato (about 1 pound)
- 1 large egg
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour, plus more for dusting
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Prick the sweet potato several times with a fork. Bake until soft, about 45 to 60 minutes.
- Let the sweet potato cool slightly, then scoop out the flesh and mash it until smooth. You should have about 1 cup of mashed sweet potato.
- In a bowl, combine the mashed sweet potato, egg, and salt. Mix well.
- Gradually add the flour, mixing until a soft dough forms. Do not overmix.
- Turn the dough out onto a lightly floured surface. Knead briefly, just until the dough comes together.
- Divide the dough into four equal pieces. Roll each piece into a long rope, about 3/4 inch thick.
- Cut each rope into 3/4-inch pieces. You can leave them as pillows or roll them over the back of a fork or a gnocchi board to create ridges.
- Bring a large pot of salted water to a boil.
- Drop the gnocchi into the boiling water in batches. Do not overcrowd the pot.
- Cook until the gnocchi float to the surface, about 2 to 4 minutes.
- Remove the cooked gnocchi with a slotted spoon and drain well. Serve immediately with your preferred sauce.
Notes
- For best results, use a potato ricer for the sweet potato flesh.
- If the dough is too sticky, add flour one tablespoon at a time.
- You can freeze uncooked gnocchi by placing them on a floured baking sheet until frozen, then transferring them to a freezer bag. Cook directly from frozen, adding a minute or two to the cooking time.
