A straightforward recipe for a moist, spiced apple cake popular in Sweden.
Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 2 medium apples, peeled, cored, and thinly sliced
- 1 tablespoon lemon juice
- 1 tablespoon coarse sugar for topping
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing just until combined. Do not overmix.
- Toss the apple slices with lemon juice.
- Spread half of the batter into the prepared cake pan. Arrange the apple slices evenly over the batter. Top with the remaining batter.
- Sprinkle the top evenly with coarse sugar.
- Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can substitute Granny Smith apples for a tarter flavor.
- Serve this cake plain or with a dusting of powdered sugar.
