Stuffed Italian Meatloaf

Description

A savory meatloaf filled with cheese and herbs, baked until firm.


Ingredients

  • 2 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 oz mozzarella cheese, sliced
  • 2 oz provolone cheese, shredded
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking pan.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Parmesan cheese, oregano, garlic powder, salt, and pepper. Mix gently until just combined; do not overmix.
  3. Divide the meat mixture in half. On a sheet of wax paper, press one half into a rectangle about 1/2 inch thick.
  4. Layer the mozzarella slices over the meat rectangle, leaving a 1-inch border on all sides. Sprinkle the provolone and parsley over the mozzarella.
  5. Carefully roll the meat mixture around the filling to form a loaf shape. Pinch the seams closed.
  6. Place the remaining half of the meat mixture on top of the rolled loaf and shape it to completely enclose the filling. Place the loaf in the prepared baking pan.
  7. Bake for 50 to 60 minutes, or until the internal temperature reaches 160 degrees F (71 degrees C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • You can substitute ground turkey or a mix of beef and pork for the ground beef.
  • If you prefer a glaze, mix 1/2 cup ketchup with 2 tablespoons brown sugar and spread it over the top during the last 15 minutes of baking.
