Description
A quick and flavorful pasta dish featuring spinach and sun-dried tomatoes.
Ingredients

- 1 pound spaghetti
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup sun-dried tomatoes, chopped
- 5 ounces fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Cook spaghetti according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook until fragrant, about 1 minute.
- Add diced tomatoes and sun-dried tomatoes to the skillet. Bring to a simmer and cook for 5 minutes.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Add the drained spaghetti to the skillet. Toss to combine with the sauce. If the sauce seems too dry, add a little of the reserved pasta water.
- Stir in the Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a richer flavor, you can add a splash of white wine when you add the tomatoes.
- You can substitute other greens like kale or Swiss chard for spinach.
