- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 tablespoons butter
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in broth until smooth.
- Add diced potatoes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in milk. Heat through, but do not boil.
- Mash some potatoes with a fork or use an immersion blender for a thicker texture, if desired.
Notes
- For a richer flavor, use heavy cream instead of milk.
- Garnish with chopped chives or crumbled bacon before serving.
