Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 cups chopped romaine lettuce
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon-tahini dressing

Instructions

  1. In a bowl, toss chicken pieces with olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Assemble the bowls: Divide lettuce among four bowls.
  4. Top lettuce with cooked quinoa, chicken, cucumber, tomatoes, and olives.
  5. Sprinkle with feta cheese.
  6. Drizzle with lemon-tahini dressing.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the chicken marinade.
  • You can substitute brown rice for quinoa.
