Description

A simple recipe for baked rigatoni pasta with meat sauce and cheese.


Ingredients

  • 1 pound rigatoni pasta
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion to the skillet and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15 minutes.
  5. In a medium bowl, mix ricotta cheese, egg, and Parmesan cheese.
  6. Preheat your oven to 375 degrees F (190 degrees C).
  7. In a large bowl, combine the cooked pasta, meat sauce, and ricotta mixture. Mix well.
  8. Spread half of the pasta mixture into a 9×13 inch baking dish. Sprinkle with half of the mozzarella cheese. Top with the remaining pasta mixture and the rest of the mozzarella cheese.
  9. Bake for 25 minutes, or until the cheese is melted and bubbly. Let stand for 5 minutes before serving.

Notes

  • You can substitute ground turkey or Italian sausage for the ground beef.
  • For a richer sauce, add a splash of red wine while simmering.
