Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces elbow macaroni, cooked according to package directions
  • Shredded cheddar cheese, for topping (optional)

Instructions

  1. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the kidney beans, diced tomatoes, tomato sauce, water, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally.
  5. Add the cooked elbow macaroni to the skillet and stir to combine.
  6. Cook for another 5 minutes, or until heated through.
  7. Serve hot, topped with shredded cheddar cheese if desired.

Notes

  • For a spicier chili mac, add a pinch of cayenne pepper or a diced jalapeño with the garlic.
  • You can substitute other types of beans, such as black beans or pinto beans.
