Description
A recipe for baked bars flavored like a pumpkin spice latte.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon instant espresso powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/4 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- In a small bowl, whisk together the instant espresso powder, cinnamon, ginger, nutmeg, cloves, and salt. Add this spice mixture to the wet ingredients and mix until just combined.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Gently fold in the pumpkin puree. Do not overmix.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan on a wire rack.
- Prepare the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled bars. Cut into squares before serving.
Notes
- For a stronger coffee flavor, increase the espresso powder to 1 1/2 teaspoons.
- You can substitute pumpkin puree with sweet potato puree if needed.
- Store leftover bars in an airtight container at room temperature for up to three days.
