Ingredients

- 2 cups pumpkin puree
- 4 cups water
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
Instructions
- Combine pumpkin puree, water, sugar, cinnamon, nutmeg, and ginger in a saucepan.
- Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
- Reduce heat to low and let it simmer for 15 minutes.
- Remove from heat and let it cool slightly.
- Strain the mixture through a fine-mesh sieve or cheesecloth into a clean container. Press down on the solids to extract all the liquid.
- Chill the juice before serving.
Notes
- Adjust sugar amount based on the sweetness of your pumpkin.
- For a smoother juice, you can blend the strained liquid briefly.
