Simple recipe for delicate pistachio-flavored cookies, often served at weddings.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup powdered sugar, plus more for dusting
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup finely ground pistachios
- 1/4 cup finely chopped pistachios for topping
Instructions
- Preheat your oven to 325 degrees F (160 degrees C). Line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and 1 cup of powdered sugar until light and fluffy.
- Beat in the egg yolk, vanilla extract, and almond extract until combined.
- In a separate bowl, whisk together the flour, salt, and ground pistachios.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Roll the dough into small balls, about 1 inch in diameter.
- Roll each ball in additional powdered sugar, then gently press the top of each cookie with a few pieces of chopped pistachios.
- Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12 to 15 minutes, or until the edges are set but the centers are still pale.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- You can substitute finely ground almonds for some of the pistachios if desired.
- Store cooled cookies in an airtight container at room temperature.
