Description
A rich brownie base topped with a sweet and nutty pecan pie layer.
Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup light brown sugar, packed
- 1/4 cup heavy cream
- 1/4 cup corn syrup
- 1/4 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, mix the melted butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the brownie batter evenly into the prepared baking pan.
- In a small saucepan, combine the brown sugar, heavy cream, corn syrup, and salt. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture is smooth, about 3 minutes. Do not boil.
- Remove the pecan pie mixture from the heat and stir in the chopped pecans.
- Pour the pecan mixture evenly over the brownie batter.
- Bake for 30 to 35 minutes, or until a toothpick inserted near the edge comes out with moist crumbs attached. The center may still look slightly soft.
- Let the brownies cool completely in the pan before lifting them out using the parchment overhang and cutting them into squares.
Notes
- For cleaner cuts, chill the brownies for at least 2 hours before slicing.
- You can toast the pecans lightly before adding them to the topping for deeper flavor.
