Simple baked bars featuring peanut butter, banana, and oats.
Ingredients

- 2 cups rolled oats
- 1 cup peanut butter
- 1/2 cup mashed ripe banana
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine the rolled oats, baking powder, and salt.
- In a separate microwave-safe bowl, warm the peanut butter slightly until it is easy to stir.
- Add the mashed banana, honey or maple syrup, and vanilla extract to the warmed peanut butter. Mix until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until everything is just combined. Do not overmix.
- Press the mixture evenly into the prepared baking pan.
- Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
- Let the bars cool completely in the pan before lifting them out and cutting them into squares.
Notes
- For a firmer bar, chill them in the refrigerator for at least one hour before cutting.
- You can add 1/2 cup of chocolate chips if you prefer.
