Description

Simple baked bars featuring peanut butter, banana, and oats.


Ingredients

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1/2 cup mashed ripe banana
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, baking powder, and salt.
  3. In a separate microwave-safe bowl, warm the peanut butter slightly until it is easy to stir.
  4. Add the mashed banana, honey or maple syrup, and vanilla extract to the warmed peanut butter. Mix until smooth.
  5. Pour the wet ingredients into the dry ingredients. Stir until everything is just combined. Do not overmix.
  6. Press the mixture evenly into the prepared baking pan.
  7. Bake for 20 to 25 minutes, or until the edges are lightly golden brown.
  8. Let the bars cool completely in the pan before lifting them out and cutting them into squares.

Notes

  • For a firmer bar, chill them in the refrigerator for at least one hour before cutting.
  • You can add 1/2 cup of chocolate chips if you prefer.
