Simple baked muffins combining pancake batter and cooked sausage pieces.
Ingredients

- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon white sugar
- 1 large egg
- 1 1/4 cups milk
- 1/3 cup melted butter
- 1 cup cooked, crumbled breakfast sausage
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the egg, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
- Gently fold in the cooked, crumbled sausage.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack.
Notes
- You can use pre-cooked sausage links or patties, crumbled after cooking.
- Serve warm with maple syrup for dipping.
