A straightforward recipe for cooking lentils entirely in one pot.


Ingredients

  • 1 cup brown or green lentils
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the lentils under cold water.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the rinsed lentils, vegetable broth, dried thyme, and bay leaf.
  6. Bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 30 to 40 minutes, or until the lentils are tender.
  8. Remove the bay leaf. Season with salt and pepper to your taste.

Notes

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • If the lentils become too thick during cooking, add a little more hot water or broth.
