- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (8 ounce) package cream cheese, softened
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup lemon juice, fresh squeezed
- 1 teaspoon vanilla extract
Instructions
- Combine graham cracker crumbs and sugar in a bowl. Pour in melted butter and mix until crumbs are moistened. Press mixture firmly into the bottom of a 9-inch pie plate. Chill crust for 15 minutes.
- In a separate large bowl, beat the softened cream cheese until smooth.
- Gradually beat in the sweetened condensed milk until fully combined.
- Stir in the lemon juice and vanilla extract until the mixture thickens slightly.
- Pour the filling over the chilled crust.
- Refrigerate for at least 4 hours, or until firm.
Notes
- You can top this cheesecake with fresh berries before serving.
- For a firmer crust, bake the crust for 8 minutes at 350 degrees Fahrenheit before chilling.
