Description

A creamy, flavorful shrimp pasta dish with sun-dried tomatoes and garlic.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound linguine or fettuccine pasta
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1/2 cup dry white wine or chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, season the shrimp lightly with salt and pepper.
  3. Heat the olive oil and butter in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
  4. Add the chopped sun-dried tomatoes to the skillet and cook for 2 minutes.
  5. Pour in the white wine or broth and let it simmer for 3 minutes, scraping up any browned bits from the bottom of the pan.
  6. Add the heavy cream and Italian seasoning. Bring the sauce to a gentle simmer. Reduce the heat to low.
  7. Add the shrimp to the sauce. Cook for 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  8. Stir in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  9. Add the drained pasta to the skillet and toss to coat thoroughly with the sauce. Season with salt, pepper, and red pepper flakes, if using.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • You can substitute chicken broth for white wine if you prefer not to use alcohol.
  • For richer flavor, use the oil from the sun-dried tomato jar instead of plain olive oil for sautéing.
