A recipe for marinated and grilled Korean beef short ribs.
Ingredients

- 2 lbs beef short ribs, flanken cut
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons sesame oil
- 2 tablespoons minced garlic
- 1 tablespoon grated fresh ginger
- 1/4 cup minced onion
- 1/4 cup Asian pear, grated (or apple)
- 1 tablespoon rice vinegar
- 1 teaspoon black pepper
- 2 green onions, sliced for garnish
Instructions
- In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, onion, grated pear, rice vinegar, and black pepper to create the marinade.
- Place the short ribs in a large zip-top bag or shallow dish. Pour the marinade over the ribs, ensuring they are fully coated.
- Marinate the ribs in the refrigerator for at least 4 hours, or preferably overnight.
- Preheat your grill to medium-high heat.
- Remove the ribs from the marinade and discard the excess liquid.
- Grill the ribs for 3 to 5 minutes per side, depending on thickness, until nicely charred and cooked through.
- Remove from the grill and let rest for 5 minutes before serving.
- Garnish with sliced green onions.
Notes
- For best results, use flanken-cut short ribs, which are cut thinly across the bone.
- If you do not have a grill, you can cook these under a broiler or in a cast-iron skillet.
