- 1 box yellow cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 1/4 cup key lime juice
- 1 teaspoon key lime zest
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the cake mix, water, oil, and eggs. Beat with an electric mixer on medium speed for 2 minutes.
- Stir in the key lime juice and zest. Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan.
- While the cake cools, prepare the frosting. In a medium bowl, beat the cream cheese and butter until smooth.
- Gradually beat in the powdered sugar until combined. Stir in the vanilla extract.
- Spread the frosting evenly over the cooled cake.
Notes
- For a stronger lime flavor, you can add an additional tablespoon of key lime juice to the batter.
- Garnish with extra lime zest or slices before serving.
