Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 ounces egg noodles
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken breasts and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Return chicken to the pot. Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  4. Remove chicken from the pot and shred it with two forks. Return shredded chicken to the pot.
  5. Add egg noodles and cook according to package directions, or until tender.
  6. Stir in fresh parsley before serving.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
  • If you don’t have fresh parsley, you can use dried parsley.
  • This soup can be made ahead of time and reheated.
