Description
A filling soup featuring sausage, potatoes, beans, and kale.
Ingredients

- 1 pound smoked sausage, sliced
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 medium potatoes, peeled and cubed
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 bunch kale, stems removed and chopped
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Cook sausage in a large pot over medium heat until lightly browned. Remove sausage and set aside, leaving drippings in the pot.
- Add olive oil to the pot if needed. Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and add diced tomatoes. Bring to a simmer.
- Add potatoes, cannellini beans, kidney beans, thyme, and rosemary. Return sausage to the pot.
- Simmer for 15 to 20 minutes, or until potatoes are tender.
- Stir in kale. Cook until kale wilts, about 5 minutes.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, mash some of the potatoes against the side of the pot before adding the kale.
- You can substitute smoked sausage with Italian sausage if desired.
