Description

Simple, no-bake energy balls with a spooky look for a quick snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (for eyes)
  • Green food coloring (optional, for color)

Instructions

  1. Combine oats, peanut butter, honey or maple syrup, ground flaxseed, and vanilla extract in a medium bowl.
  2. If using food coloring, add a few drops and mix until the mixture is uniformly green.
  3. Stir in half of the mini chocolate chips.
  4. Roll the mixture into small, bite-sized balls (about 1 inch diameter).
  5. Press the remaining mini chocolate chips into the sides of the balls to resemble eyes.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute sunflower seed butter for peanut butter if needed.
