Ingredients

- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (for eyes)
- Green food coloring (optional, for color)
Instructions
- Combine oats, peanut butter, honey or maple syrup, ground flaxseed, and vanilla extract in a medium bowl.
- If using food coloring, add a few drops and mix until the mixture is uniformly green.
- Stir in half of the mini chocolate chips.
- Roll the mixture into small, bite-sized balls (about 1 inch diameter).
- Press the remaining mini chocolate chips into the sides of the balls to resemble eyes.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to one week.
- You can substitute sunflower seed butter for peanut butter if needed.
