Ingredients

- 1 pound pasta, cooked and cooled
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked and cooled pasta, diced cucumber, diced red bell pepper, sliced red onion, halved Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper.
- Pour the dressing over the pasta mixture.
- Toss gently to combine all ingredients.
- Chill for at least 30 minutes before serving to allow the flavors to meld.
Notes
- You can add grilled chicken or shrimp for a heartier meal.
- Adjust the amount of vinegar and lemon juice to your preference.
- For best results, use good quality Kalamata olives and feta cheese.
