- 2 lbs small potatoes, halved or quartered
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the cut potatoes in a large bowl.
- In a small bowl, mix the melted butter, minced garlic, salt, and pepper.
- Pour the butter mixture over the potatoes and toss until they are evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30 to 35 minutes, turning them halfway through, until they are golden brown and tender.
- Remove from the oven, sprinkle with fresh parsley, and serve hot.
Notes
- Use Yukon Gold or red potatoes for the best texture.
- For crispier edges, increase the roasting time by 5 minutes.
