Ingredients

  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked, shredded chicken breast
  • 1 cup egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Pour in chicken broth. Bring the mixture to a boil.
  4. Add shredded chicken and dried thyme. Reduce heat and simmer for 10 minutes.
