Ingredients

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup hot water or hot coffee
  • 1 cup fresh blackberries for topping
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Add the sugar to the dry ingredients and mix well.
  4. In a separate bowl, combine the buttermilk, oil, eggs, and vanilla extract. Mix these wet ingredients into the dry ingredients until just combined.
  5. Carefully stir in the hot water or coffee until the batter is smooth. The batter will be thin.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the milk, until smooth. Beat in the vanilla extract.
  9. Once cupcakes are cool, frost them and top each with a fresh blackberry.

Notes

  • Using hot coffee instead of hot water deepens the chocolate flavor.
