Simple recipe for refreshing cucumber salad sandwiches.

- 1 cup thinly sliced cucumber
- 4 ounces cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 8 slices white bread
- Butter, softened (for spreading)
Instructions
- Place sliced cucumber in a bowl and sprinkle lightly with salt. Let sit for 10 minutes, then gently press out excess moisture with paper towels.
- In a separate bowl, combine the softened cream cheese, mayonnaise, dill, lemon juice, salt, and pepper. Mix until smooth.
- Gently fold the drained cucumber slices into the cream cheese mixture.
- Lightly spread butter on one side of each slice of bread.
- Spread the cucumber salad mixture evenly over the unbuttered side of four bread slices.
- Top with the remaining four slices of bread, butter-side up.
- Cut off the crusts if desired, and slice the sandwiches in half.
Notes
- For extra flavor, use a mix of cream cheese and goat cheese.
- Chilling the sandwiches for 30 minutes before serving improves texture.
- Use thinly sliced seedless cucumbers for the best results.
