Ingredients

  • 1 cup thinly sliced cucumber
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 8 slices white bread
  • Butter, softened (for spreading)

Instructions

  1. Place sliced cucumber in a bowl and sprinkle lightly with salt. Let sit for 10 minutes, then gently press out excess moisture with paper towels.
  2. In a separate bowl, combine the softened cream cheese, mayonnaise, dill, lemon juice, salt, and pepper. Mix until smooth.
  3. Gently fold the drained cucumber slices into the cream cheese mixture.
  4. Lightly spread butter on one side of each slice of bread.
  5. Spread the cucumber salad mixture evenly over the unbuttered side of four bread slices.
  6. Top with the remaining four slices of bread, butter-side up.
  7. Cut off the crusts if desired, and slice the sandwiches in half.
