A simple recipe for a rich and creamy soup featuring cheese tortellini and Italian sausage.

- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the sausage in a large pot over medium heat until browned. Drain off excess grease.
- Add the onion to the pot and cook until softened, about 5 minutes.
- Stir in the garlic and cook for 1 minute more.
- Pour in the chicken broth and add the diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
- Add the tortellini and cook according to package directions, usually about 5 to 7 minutes, until tender.
- Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the cheese melts and the soup is heated through. Do not boil after adding the cream.
- Serve immediately.
Notes
- You can use sweet or hot Italian sausage based on your preference.
- For a thicker soup, stir in 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water before adding the cream.
