Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 2 cups milk
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth until smooth.
  5. Add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  6. Stir in milk. Heat through, but do not boil.
  7. If using, stir in cheddar cheese until melted.
  8. Serve hot.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot.
  • You can substitute vegetable broth for chicken broth for a vegetarian option.
