Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken broth
- 2 cups milk
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in chicken broth until smooth.
- Add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in milk. Heat through, but do not boil.
- If using, stir in cheddar cheese until melted.
- Serve hot.
Notes
- For a thicker soup, mash some of the potatoes against the side of the pot.
- You can substitute vegetable broth for chicken broth for a vegetarian option.
