A quick recipe for savory beef strips cooked with bell peppers and onions in a flavorful brown sauce.

- 1 pound flank steak, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1 tablespoon vegetable oil, plus 2 tablespoons for stir-frying
- 1 large onion, cut into wedges
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 cup beef broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
Instructions
- In a medium bowl, combine the sliced steak with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and baking soda. Mix well and let it marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat until shimmering. Add the marinated steak in a single layer, cooking in batches if necessary, until browned on all sides. Remove the steak and set it aside.
- Add the remaining 2 tablespoons of oil to the wok. Add the onion, green pepper, and red pepper. Stir-fry for 3 to 4 minutes until the vegetables are crisp-tender.
- Push the vegetables to one side of the wok. Add the minced garlic and grated ginger to the clear space and cook for 30 seconds until fragrant.
- In a small bowl, whisk together the beef broth, 2 tablespoons soy sauce, oyster sauce, and sugar. Pour this mixture into the wok. Bring the sauce to a simmer.
- Return the cooked steak to the wok. Stir to coat everything with the sauce.
- Pour the cornstarch slurry into the simmering sauce while stirring constantly until the sauce thickens.
- Stir in the sesame oil. Serve immediately over rice.
Notes
- For best results, slice the flank steak when it is partially frozen.
- You can substitute yellow or orange bell peppers for the red and green ones.
