A simple and flavorful chicken dish with spinach and mushrooms.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 5 oz fresh spinach
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add mushrooms and cook until browned, about 5-7 minutes.
- Stir in spinach and cook until wilted.
- Pour in chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes until sauce thickens slightly.
- Return chicken to the skillet and stir to coat.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- Serve over rice or pasta.
- Add a squeeze of lemon juice before serving for brightness.
