Description
A fast and simple stir fry using ramen noodles, chicken, and mixed vegetables.
Ingredients

- 2 packs instant ramen noodles (discard seasoning packets)
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 cup sliced carrots
- 1 cup broccoli florets
- 1/2 cup sliced onion
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
Instructions
- Cook ramen noodles according to package directions, drain, and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add garlic, carrots, broccoli, and onion to the skillet. Stir fry for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, and ginger.
- Return the cooked chicken to the skillet. Add the cooked ramen noodles.
- Pour the sauce mixture over the noodles and chicken. Toss everything together until well combined and heated through, about 2 minutes.
- Serve immediately.
Notes
- You can substitute any firm vegetables you prefer, such as bell peppers or mushrooms.
- For extra flavor, add a dash of sesame oil at the end.
