A straightforward recipe for classic breaded chicken breasts topped with tomato sauce and melted cheese.

- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup olive oil for frying
- 2 cups marinara sauce
- 8 ounces mozzarella cheese, sliced or shredded
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
- Pound the chicken breasts to about 1/2 inch thickness. Season both sides with salt and pepper.
- Set up a breading station with three shallow dishes. Place flour in the first dish. Whisk eggs in the second dish. In the third dish, combine breadcrumbs, 1/2 cup Parmesan cheese, oregano, and garlic powder.
- Dredge each chicken breast first in flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the chicken firmly into the breadcrumb mixture to coat completely.
- Heat olive oil in a large skillet over medium-high heat. Fry the breaded chicken for 3 to 4 minutes per side until golden brown. You may need to work in batches.
- Place the browned chicken breasts in the prepared baking dish.
- Spoon about 1/2 cup of marinara sauce over each piece of chicken. Top with mozzarella cheese and a sprinkle of extra Parmesan cheese.
- Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
Notes
- Serve immediately over cooked spaghetti or alongside a green salad.
- You can substitute Italian seasoned breadcrumbs for the plain breadcrumbs and seasonings listed.
