A simple recipe for a rich and cheesy potato casserole.

- 2 pounds frozen shredded potatoes, thawed
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese, plus extra for topping
- 1/2 cup milk
- 1/2 cup chopped onion
- 1/4 cup melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
- In a large bowl, combine the thawed potatoes, cream of chicken soup, sour cream, 1 cup of cheddar cheese, milk, chopped onion, melted butter, salt, and pepper. Mix until everything is well combined.
- Pour the potato mixture into the prepared baking dish.
- Sprinkle extra shredded cheddar cheese evenly over the top.
- Bake for 45 to 55 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly browned.
- Let the casserole rest for 5 minutes before serving.
Notes
- For a crispier topping, you can add 1/2 cup of crushed cornflakes mixed with 1 tablespoon of melted butter on top of the cheese before baking.
- You can substitute cream of mushroom soup for cream of chicken soup if desired.
