- 1 pound ground beef
- 1 medium onion, chopped
- 4 cups beef broth
- 1 cup diced potatoes
- 1 teaspoon dried mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 4 cups milk
- 8 ounces processed cheese, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Brown the ground beef in a large pot over medium heat. Drain off excess fat.
- Add the chopped onion to the pot and cook until soft, about 5 minutes.
- Pour in the beef broth. Add potatoes, mustard, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- In a separate bowl, whisk the flour into the milk until smooth.
- Slowly pour the milk mixture into the simmering soup, stirring constantly. Cook until the soup thickens, about 5 to 7 minutes. Do not boil.
- Reduce heat to low. Stir in the processed cheese cubes until melted and smooth.
- Stir in the shredded cheddar and Monterey Jack cheeses until melted. Serve hot.
Notes
- For a richer flavor, use half-and-half instead of milk.
- Garnish individual servings with extra shredded cheese or crumbled bacon bits.
