- 2 cups riced cauliflower, cooked and drained well
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or oil for the waffle iron
Instructions
- Preheat your waffle iron and lightly grease it with cooking spray or oil.
- Ensure the cooked cauliflower rice is very dry. Press out as much moisture as possible using a clean kitchen towel or paper towels.
- In a medium bowl, combine the dry cauliflower rice, eggs, cheddar cheese, flour, baking powder, salt, and pepper. Mix until just combined. Do not overmix.
- Spoon the batter onto the hot waffle iron, using the amount recommended for your specific iron.
- Cook according to your waffle iron’s instructions, usually until golden brown and crisp.
- Carefully remove the waffle and repeat with the remaining batter.
Notes
- Squeeze the cauliflower very dry; excess water prevents crisp waffles.
