A rich cheesecake layered with spiced carrot cake.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons melted butter
- 1 1/2 pounds cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup grated carrots
- 1/2 cup chopped pecans
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Cream cheese frosting for topping
Instructions
- Preheat your oven to 350°F (175°C). Wrap the outside of a 9-inch springform pan in heavy-duty aluminum foil.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
- Beat the softened cream cheese until smooth. Gradually beat in 1 cup sugar, sour cream, and vanilla extract. Mix until just combined.
- Beat in the eggs one at a time, mixing just until incorporated after each addition. Do not overmix.
- Fold in the grated carrots, pecans, cinnamon, nutmeg, and ginger.
- Pour the batter over the cooled crust. Place the springform pan inside a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (water bath).
- Bake for 55 to 65 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and the water bath. Cool completely on a wire rack. Refrigerate for at least 6 hours, or preferably overnight.
- Frost the top with cream cheese frosting before serving.

- Use finely grated carrots for the best texture in the cheesecake layer.
- Ensure all dairy ingredients are at room temperature before mixing for a smooth batter.
- The water bath helps prevent cracking and ensures even baking.
