Simple recipe for frozen blackberry cheesecake bites on a stick.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh or frozen blackberries, pureed and strained
- 1/4 cup heavy cream
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 12 popsicle sticks
Instructions
- Combine the softened cream cheese, powdered sugar, and vanilla extract in a bowl. Mix until smooth.
- Stir in the blackberry puree and heavy cream until fully incorporated.
- In a separate bowl, mix the graham cracker crumbs and melted butter until the mixture resembles wet sand.
- Press about 1 tablespoon of the graham cracker mixture into the bottom of small silicone molds or muffin liners.
- Spoon the cheesecake mixture over the crust layer, filling the molds.
- Insert a popsicle stick into the center of each pop.
- Freeze for at least 4 hours, or until firm.
- Remove from molds before serving.
Notes
- If using frozen blackberries, thaw them completely before pureeing.
- For a smoother puree, press the mashed berries through a fine-mesh sieve to remove seeds.
- If you do not have popsicle molds, you can use small paper cups lined with plastic wrap.
