Description

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup pearl barley, rinsed
  • 4 cups shredded green cabbage
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
  2. Add olive oil, onion, carrots, and celery to the pot. Cook until vegetables soften, about 5 to 7 minutes.
  3. Pour in the beef broth and diced tomatoes. Add thyme and bay leaf. Bring the mixture to a boil.
  4. Stir in the rinsed barley. Reduce heat to low, cover, and simmer for 30 minutes.
  5. Add the shredded cabbage. Continue to simmer, uncovered, for another 15 to 20 minutes, or until the barley is tender.
  6. Remove the bay leaf. Season with salt and pepper before serving.

Notes

  • For a richer flavor, brown the beef in batches and do not overcrowd the pot.
  • Rinsing the barley removes excess starch, which helps prevent the soup from becoming too thick.
