Tender sweet potatoes filled with savory BBQ chicken.
Ingredients

- 2 large sweet potatoes
- 1 cup cooked shredded chicken
- 1/2 cup BBQ sauce
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them with a fork several times.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- While the sweet potatoes bake, combine the shredded chicken and BBQ sauce in a bowl. Mix well.
- Once the sweet potatoes are tender, let them cool slightly. Cut them in half lengthwise.
- Scoop out some of the flesh from each half, leaving a border. Mash the scooped-out flesh and mix it with the BBQ chicken mixture.
- Spoon the BBQ chicken mixture back into the sweet potato shells.
- Top with chopped red onion and cilantro.
- Season with salt and pepper.
- Serve immediately.
Notes
- You can use leftover rotisserie chicken for this recipe.
- Adjust the amount of BBQ sauce to your preference.
- For a spicier kick, add a pinch of cayenne pepper to the chicken mixture.
