Simple Zucchini Patties

Description

These are simple pan-fried patties made from grated zucchini.


Ingredients

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying

Instructions

  1. Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible.
  2. In a medium bowl, combine the squeezed zucchini, flour, beaten egg, Parmesan cheese, parsley, salt, and pepper. Mix until just combined. The mixture will be moist.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon to form patties about 1/2 inch thick. Do not overcrowd the pan.
  5. Cook for 3 to 4 minutes per side, until golden brown and cooked through.
  6. Remove the patties from the skillet and place them on a plate lined with paper towels to drain excess oil.
  7. Serve warm.

Notes

  • For crispier patties, you can add 1 tablespoon of breadcrumbs to the mixture.
  • Serve these patties with a dollop of plain Greek yogurt or sour cream.
