Description

Simple grilled chicken skewers marinated in lemon, garlic, and Parmesan cheese.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat completely.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
  4. If using wooden skewers, soak them in water for 20 minutes before use.
  5. Thread the marinated chicken pieces onto the skewers.
  6. Preheat your grill to medium-high heat.
  7. Grill the skewers for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has internal temperature of 165°F (74°C).
  8. Remove from the grill and serve immediately.

  • You can thread vegetables like zucchini or bell peppers between the chicken pieces for added color and flavor.
