Description
Simple grilled chicken skewers marinated in lemon, garlic, and Parmesan cheese.

- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup fresh lemon juice
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper to make the marinade.
- Add the chicken cubes to the marinade and toss to coat completely.
- Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
- If using wooden skewers, soak them in water for 20 minutes before use.
- Thread the marinated chicken pieces onto the skewers.
- Preheat your grill to medium-high heat.
- Grill the skewers for 4 to 6 minutes per side, turning occasionally, until the chicken is cooked through and has internal temperature of 165°F (74°C).
- Remove from the grill and serve immediately.
Notes
- You can thread vegetables like zucchini or bell peppers between the chicken pieces for added color and flavor.
- Grill temperature control helps prevent the Parmesan from burning too quickly.
