Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together 1 cup softened butter and 2 cups granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In a small bowl, combine 1 cup milk, cocoa powder, cooled coffee, and instant coffee granules until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter evenly into the prepared cake pans.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. For the frosting, beat 1/2 cup softened butter until creamy.
  11. Gradually add the powdered sugar, alternating with 1/4 cup milk, until the frosting reaches your desired consistency.
  12. Stir in the remaining cocoa powder and instant coffee granules until well combined.
  13. Frost the cooled cake layers.
