A straightforward recipe for hearty vegetable beef soup.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chopped potatoes
- 1 cup frozen green beans
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
- Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 minutes.
- Pour in the beef broth and add the diced tomatoes (with their juice).
- Stir in the potatoes, green beans, salt, pepper, and thyme.
- Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the potatoes are tender.
Notes
- For a thicker soup, add 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water during the last 5 minutes of simmering.
- You can substitute ground turkey for the ground beef if desired.
