A rich cheesecake featuring a nutty brown butter flavor and vanilla bean notes on a simple crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 vanilla bean, seeds scraped
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup sour cream
- 4 tablespoons unsalted butter, browned and cooled slightly
Instructions
- Preheat your oven to 350 degrees F. Wrap the outside of a 9-inch springform pan with heavy-duty foil.
- Mix graham cracker crumbs, 1/4 cup sugar, and 6 tablespoons melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Cool completely.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 1/2 cups sugar and flour, mixing until just combined.
- Mix in vanilla extract, vanilla bean seeds, and salt. Beat in eggs one at a time, mixing only until each is incorporated.
- Stir in sour cream and the cooled brown butter until the batter is uniform.
- Pour the batter over the cooled crust. Place the springform pan in a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
- Bake for 55 to 65 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven. Leave the cheesecake in the oven with the door slightly ajar for 1 hour.
- Remove the cheesecake from the water bath and foil. Cool on a wire rack completely. Refrigerate for at least 6 hours before serving.
Notes
- To brown butter, melt 4 tablespoons of butter in a light-colored pan over medium heat. Cook, swirling often, until the milk solids turn brown and the butter smells nutty. Remove from heat immediately.
- Use room temperature ingredients for the best cheesecake texture.
